Chicken Parmesan Casserole
6-17-22. Delicious! Used 2 jars of our garden tomatoes, garlic instead of garlic powder. Made enough for two meals!
Ingredients
  • 8 ounces whole-wheat rotini
  • 4 tablespoons extra-virgin olive oil, divided
  • 1 cup chopped onion
  • 1 (28 ounce) can no-salt-added crushed tomatoes
  • 1 teaspoon garlic powder
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon crushed red pepper
  • 2 cups shredded cooked chicken
  • 1 cup shredded mozzarella cheese
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped parsley
