Roasted Cauliflower and Leek Soup
Ingredients
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 head cauliflower, broken into florets
  • 3 tablespoons butter
  • 2 leeks, white part only, chopped
  • ¼ cup all-purpose flour
  • 1 quart chicken stock
  • ⅓ cup heavy whipping cream (OR cream cheese, half 'n half, milk, almond milk, etc.)
  • 1 teaspoon dried chervil
  • 1 teaspoon kosher salt
  • 1 tablespoon cracked black pepper
  • 3 strips of bacon OR prosciutto, fried and crumbled for top (optional)
  • Cheese to top, cheddar or Parmesan (optional)
