Ingredients
  • Basic Pie Crust, recipe to follow
  • 1 ¼ cups packed light brown sugar
  • ¾ cup light corn syrup
  • 4 tablespoons unsalted butter
  • 5 tablespoons aged Kentucky bourbon
  • ½ teaspoon fine sea salt
  • 3 large eggs
  • 1 tablespoon pure vanilla extract, preferably Bourbon vanilla
  • Scant 2 cups jumbo pecan halves (about 7 ounces)
  • Whipped cream or vanilla ice cream, for serving

  • 1 cup pastry flour
  • ½ teaspoon fine sea salt
  • ½ cup cold unsalted butter, cut into ¼ inch cubes
  • 2 tablespoons ice water
