Ingredients
  • ¼ cup oil
  • ½ cup hot sauce
  • 1 tsp garlic powder
  • 1 tablespoon chili powder or paprika
  • 1 tsp black pepper
  • ½ tsp salt
  •  
  • 2 pounds chicken breasts, boneless, skinless
  •  
  • 1 russet potato, cut into 3/16" inch slices
  •  
  • 1 tablespoon butter
  • 1 medium onion, diced
  • 1 green pepper, diced
  • 2 celery stalks, diced
  •  
  • 2 pounds chicken breast, boneless, skinless, diced
  • 1 to 2 cups sharp cheddar cheese, shredded
  •  
  • Blue Cheese for serving
Steps
  1. Preheat oven to 450 degrees.
  2. In Instant Pot, prepare a sauce by combining hot sauce, onion, garlic, chili, pepper and salt. Stir until well combined. Add chicken into Instant Pot. Cook for 25 minutes and then do a quick release. Remove chicken and shred chicken in Kitchen Aid. Thicken sauce in Pot. (With flour or cornstarch mixtures)
  3. I sliced potatoes about 3/16" thick on mandolin. Toss potato slices to coat. Roast potatoes in air fryer if you have one, then line pan. Either line 9x13 or two 6x8 pans.
  4. OR Place the potato along the bottom of the pan, covering as much of the pan as possible but keeping it to one layer. It is okay to overlap slices. Transfer baking dish to the oven and roast for 30 minutes or until the bottom of the potatoes have browned.
  5. While the potatoes are roasting and chicken is cooking, place a skillet over medium high heat. Add butter. Once melted add onion, bell pepper, celery and saute until the onion begins to brown, about 8 to 10 minutes.
  6. When the potatoes are roasted, remove the pan from the oven and lower the temp to 350°. Mix chicken, sauce, and vegetables together. Then place on top of the potatoes. Top with cheese. Return to oven and bake for 15 minutes or until the cheese is melted and beginning to brown.
Notes
  • Can be frozen. Then bake at 350° for thirty minutes.
