Maafe (Senegalese Peanut Stew)
Ingredients
  • 2 lbs chicken or beef, cut into chunks (see note 1)
  • subheading: To marinate the meat:
  • 1 tsp paprika
  • 1 tsp garlic, finely chopped or minced
  • 1 tsp ginger, finely chopped or minced
  • ½ tsp salt
  • ½ tsp freshly cracked black pepper
  • subheading: For Maafe:
  • 1 large onion, chopped
  • 1 Tbsp garlic, minced
  • 1 Tbsp ginger, minced
  • 1 jalapeño, finely chopped (See note 2)
  • 3 Tbsp tomato paste
  • 1 cup tomato sauce or crushed tomatoes
  • 1 tsp paprika
  • 1 to 2 tsp red chili flakes (I used 2)
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 10 to 12, baby carrots
  • 3 cups chicken broth
  • ½ cup peanut butter
  • 3 to 4 Tbsp oil
  • Salt to taste
