Quinoa Salad Recipe with Pickled Onions
Ingredients
  • 3 cups cooked quinoa
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup diced cucumber, seeds removed
  • 2 tbs finely chopped green onions or scallions
  • Juice of 1 large lime
  • 2 tbs finely chopped cilantro
  • 2 tbs olive oil
  • Salt and pepper to taste
  • Serve with - Salad greens and cebollas curtidas or pickled red onions
