Scallop Scampi with Zucchini and Squash Noodles

Ingredients
  • 1 tbsp of Healthy Fat option (grapeseed, coconut or avocado oil)
  • 1 Lemon cut in half
  • 11oz of Scallops (I prefer Bay Scallops)
  • 1 Zucchini (spiralized)
  • 1 Squash (spiralized)
  • ½ Red Onion
  • Cilantro (my boyfriend does not like cilantro so we used Basil) chopped
  • 1 cup of Tomatoes chopped
  • ¼ tsp Red Pepper flakes (optional)
  • ¼ tsp Dried Rosemary
  • ¼ tsp Dried Oregano
  • salt and pepper
Steps
  1. Start by adding your 1 tbsp of healthy fat option to your frying pan on a medium heat add your onion and cook for about 2 mins or until translucent. Add your tomatoes and let cook for 1 to 2mins.
  2. Next add your Zucchini and Squash noodles and mix with the onion and tomato mixture. Add in your chopped Cilantro or Basil, red pepper flakes, rosemary and oregano. Stir well to make sure your pasta is well coated. Cook for 4 to 5min.
  3. Lastly add in your Scallops and salt and pepper and the juice of your lemon . Stir well and cover with a lid let cook 1 to 2mins for smaller scallops and 4 to 6mins for larger scallops (don't cook too long the scallops will get chewy).
  4. Serve and Enjoy!
