Quinoa Stuffed Bell Peppers with Black Beans and Cheese
Ingredients
  • 1 ½ c . quinoa
  • 3 c . water*
  • juice from 1 lime
  • 1 T . oil
  • 1 tsp . cumin
  • ½ tsp . garlic powder
  • salt and pepper
  • 1 to 3 T . chopped cilantro
  • 1 c . black beans
  • 6 bell peppers , cut in half leaving stem in, decored and deseeded
  • 1 T . extra virgin oil
  • 1 c . grated sharp cheddar cheese , optional
