Yum Yum Noodle Bowl
Ingredients
  • Broccoli Stir Fry (recipe below)
  • 1 package (8 oz / 225g) Udon noodles OR whole wheat spaghetti noodles, cooked to package
  • directions
  • Yum Yum Sauce
  • Sliced green onions
  • Dried red chili flakes (optional)
  • subheading: For the Broccoli Stir Fry:
  • ¼ cup water (60ml)
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons coconut aminos
  • 1 tablespoon arrowroot powder / flour / starch
  • ½ tablespoon prepared yellow mustard
  • ½ teaspoon black pepper (about 20 turns)
  • ½ teaspoon onion powder
  • 1 cup chopped yellow onion (130g)
  • 1 red bell pepper, thinly sliced (about 1 cup / 150g)
  • ½ cup diced carrots (55g)
  • ½ cup thinly sliced celery (slice on a slight angle / 55g)
  • 3 cups bite­sized broccoli florets (150g)
  • 2 garlic cloves, minced
  • 1 cup pea pods (aka snow peas / 75g)
  • Asian Tofu Crumbles
Steps
  1. In a small bowl, whisk together the water, soy sauce, coconut aminos, arrowroot powder,
  2. yellow mustard, black pepper and onion powder. Set aside for now.
  3. Heat a large skillet over medium ­high heat for 2 minutes. Add the onion, red bell pepper,
  4. carrots and celery and cook for 5 minutes, stirring frequently and adding a splash of water if
  5. they start to stick.
  6. Add the broccoli and garlic and saute 7 additional minutes, adding a splash of water and
  7. stirring if they start to stick. Add the peapods and Asian Tofu Crumbles and cook for an
  8. another 2 minutes, until the veggies are crisp­ tender.
  9. Whisk the liquid mixture that you set aside earlier and then add it to the skillet and gently stir,
  10. scraping the bits of browned veggies from the bottom of the skillet with a spatula and
  11. incorporating them into the mixture. Remove from the heat when the sauce has thickened and
  12. glazed the vegetables, about 1 or 2 minutes.
  13. subheading: To serve:
  14. Cook your noodles according to package directions, then drain. Place some noodles in your
  15. serving bowl and toss with a spoonful of Yum Yum Sauce. Add a generous scoop of the
  16. Broccoli Stir Fry on top, then drizzle with more Yum Yum Sauce. Garnish with a sprinkle of
  17. sliced green onions and red pepper flakes (if using).
