Zucchini Caviar
Very easy to make and oh so delicious!
It has vegetables with a very low caloric density so it's very filling but very low in calories.
Ingredients
  • One big onion chopped
  • Two bell peppers cubed
  • Two big or three medium zucchinis cubed
  • 2 large garlic cloves crushed
  • 10 campari tomatoes cubed
  • One cup of fresh dill
Steps
  1. Fry onions for 10 min ( add water if needed), add bell peppers and keep frying for another 10 min. Add zucchini and garlic, close the lid and sauteing for 10 min, add tomatoes and dill, cover and cook for 10 min then open and keep cooking until the liquid reduces.
Notes
  • Eat it hot or chilled, I like to eat it on top of my lentil waffles or on top of my baked potatoes.
