  • 5 tablespoons canola oil (divided)
  • ½ cup yellow onion (thinly sliced)
  • 1 cup red bell pepper (thinly sliced)
  • 1 zucchini (cut into thin strips)
  • 1 cup shiitake mushrooms (fresh; thinly sliced)
  • 1 tablespoon fresh ginger (grated)
  • 2 cloves garlic (minced)
