Spaghetti Squash Mexi Bowl
Super Easy with Little Clean up and Oh so yummy! (R1 approved) Prep Time: 10min Cook Time: 60min

Ingredients
  • 1 Medium Sized Spaghetti Squash
  • 1 Tbsp of Healthy Fat option (Coconut Oil, Avocado oil or Grapeseed Oil)
  • ½ Cup of Onion (chopped)
  • 2 Large Garlic Cloves
  • ½ Cup of Red Pepper
  • 1 Jalapeno (optional)
  • 20 oz of Ground Turkey
Steps
  1. Preheat your oven to 350 degrees
  2. Place the full spaghetti Squash on a baking sheet and place in the oven. Let cook for 45 to 50min. Let cool before cutting open. Once cooled cut open and scoop the seeds out. Loosen up the rest of the spaghetti squash with a fork.
  3. While the Squash is cooling you can start cooking your filling. Start by adding your Healthy fat option to the pan and add your chopped onions and garlic to the pan. Let cook on a medium heat for about 2 to 3mins or until garlic becomes fragrant. Add in your red pepper and jalapeno and let cook for another 3 to 4mins. Add in your ground turkey and your seasoning. Mix well and cook until Turkey is done. About 8min or so. Once your filling is complete fill the Squash with your mixture. Top the mixture with your nutritional yeast for a cheesy topping. Place in the Broiler on high for 2 to 3min. Remove and Enjoy!
