Boiled Squid with Miso Vinaigrette イカの酢味噌和え
Ingredients
  • 2 fresh spear squid (Yari Ika)
  • 3 green onions/scallions
  • kosher/sea salt (I use Diamond Crystal; Use half for table salt)
  • subheading: Miso Vinaigrette (Sumiso Sauce):
  • 2 Tbsp miso (I used white miso)
  • 2 Tbsp rice vinegar
  • 2 Tbsp sugar
  • ½ tsp mirin
  • Japanese karashi hot mustard (optional)
