Coffee Bean Cookies
Ingredients
  • 8g instant coffee
  • 32ml hot water
  • 280g unsalted butter, room temp.
  • 228g icing sugar, sifted
  • 4 large egg yolks
  • 356g all purpose flour, sifted
  • 108g corn starch, sifted
  • 52g cocoa powder, sifted
  • 6g salt
Steps
  1. Cream butter and sugar until combined.
  2. Mix in egg and coffee solution (instant coffee diluted with hot water).
  3. Mix in the rest of dry ingredients until they come together and a dough is formed.
  4. With a scale, weigh out each cookie to 15 grams. Roll each to oval shape and place on a tray lined with parchment paper. Cut a long incision in the middle of each cookie. Then store in the fridge for 1 hour.
  5. Bake at 160°C (conventional oven temp.) for 16 to 18 minutes.
  6. To make chocolate glaze, microwave a bowl of chocolate bar for 20 to 30 seconds. Take them out and stir. Microwave again and repeat the process until chocolate is completely melted.
  7. Dip the bottom of cookie in melted chocolate. Place on a rack until chocolate glaze is set.
