Creamy Asparagus Pasta
Ingredients
  • 20 grams gim, often labeled as roasted seaweed
  • 2 (4-inch) squares dasima or kombu (dried kelp)
  • 1 tablespoon kosher salt
  • 1 pound rigatoni
  • 1 ½ cups heavy cream
  • 1 small red onion, halved and thinly sliced
  • 2 large garlic cloves, finely grated
  • 1 teaspoon freshly ground black pepper, plus more to taste
  • 1 teaspoon rice vinegar
  • ½ pound asparagus, thinly sliced at an angle
  • 1 tablespoon toasted sesame oil
  • Flaky sea salt, for serving
