I have been cooking over 50 years. I cook from scratch every day, so I am always looking for new recipes to try.

subheading: Cake:

3 cups all-purpose Flour

1 ½ teaspoons Baking Soda

½ teaspoon Salt

4 large very ripe Bananas, mashed*

4 Tablespoons fresh Orange juice plus zest of 1 Orange

¾ cup unsalted Butter, softened

1 ½ cups Brown sugar (can use white, too and cake will be paler in color)

3 large Eggs

2 teaspoons Vanilla Extract

1 ½ cups Buttermilk

1 cup Pecans, chopped

note: You can use a food processor to mash the bananas.

note: You can also use regular white sugar (cake is slightly darker if brown sugar is used).

subheading: For the frosting:

½ cup unsalted Butter, softened

1 (8oz) package cream cheese, softened

3 ½ cups Icing Sugar

1 teaspoon Vanilla Extract
