The Best Healthy Instant Pot Chicken and Rice
Ingredients
  • 2 boneless, skinless chicken breasts; cut into cubes

  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 cup thickly sliced carrots (or frozen mixed vegetables)
  • 8 ounces sliced cremini mushrooms, sliced (optional)
  • 1 ½ teaspoons Worcestershire sauce
  • 1 cup uncooked long grain brown rice, rinsed and drained
  • 2 cups chicken stock
  • 1 bay leaf
