HUDSON'S MAURICE SALAD
I can say this is one of my favorite salads ever!

One menu item from Hudson's, in particular, was the Maurice Salad. Who was Maurice? Some say he was a chef at Hudson's, where this salad made its debut, though no one knows for sure. While Maurice's identity may have faded into obscurity, his chef's salad with this lemony-mayo dressing remains the number-one seller in all of Macy's Michigan restaurants known as "The Lakeshore Grille". Bottles of this famous dressing can be purchased in all of Macy's Michigan locations, and now you can make this delicious dressing yourself!

Ingredients
  • subheading: DRESSING:
  • 2 t. white vinegar
  • 1 ½ t. lemon juice
  • 1 ½ t. onion juice
  • 1 ½ t. sugar
  • 1 ½ t. Dijon mustard
  • ¼ t. dry mustard
  • 1 c. mayonnaise
  • 2 T. chopped fresh parsley
  • 1 hard cooked egg, diced
  • salt to taste

  • subheading: SALAD INGREDIENTS:
  • 14 oz. ham, cut into strips
  • 14 oz. cooked turkey breast, cut into strips
  • 14 oz. Swiss cheese, cut into strips
  • ½ c. slivered, sweet gherkin pickles
  • 1 head Iceberg lettuce, shredded
  • 12 to 16 pimento stuffed green olives
Steps
  1. Combine the first 6 dressing ingredients and stir to dissolve the sugar.
  2. Add remaining dressing ingredients and mix well.
  3. Combine the ham, turkey, cheese and pickles together in a large bowl.
  4. Toss together with the dressing.
  5. Divide the lettuce among plates, top with salad and garnish each plate with 2 olives.
