Smashed Potatoes

Ingredients
  • 1 lb Fingerling potatoes
  • 20g Salt, plus more to taste
  • .5 cup Cream
  • 10 tbsp Butter
  • Black pepper, as needed
  • 3 tbsp Chives
Steps
  1. Clean potatoes thoroughly.
  2. Place in a pot with salt and water. Bring to a boil, then simmer over medium heat until fork tender but not mushy, about 20 minutes.
  3. Drain water from the pot and add in cream.
  4. Lightly mash the potatoes with a fork. Add butter and fold into mashed potatoes until fully incorporated. Season with salt and pepper.
  5. Cover to keep warm.
  6. Just before serving, mince chives.
  7. Fold into potatoes and serve immediately.
