Keto Blueberry Cake
Ingredients
  • 2 ½ cups of finely milled almond flour, measured and sifted
  • 1 cup of coconut flour
  • ¾ cup of unsalted butter, room temperature
  • 5 eggs, room temperature
  • 1 ¼ cups of granulated sugar substitute
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of lemon extract
  • 2 ½ teaspoons of baking powder
  • ¼ teaspoon of sea salt
  • ½ cup of heavy whipping cream
  • 2 teaspoons of fresh lemon zest
  • 1 pint of fresh or frozen blueberries
  • 8 ounces of softened full-fat cream cheese

  • ¾ cup of confectioner's sugar substitute
  • ¼ cup of fresh lemon juice
  • 1 teaspoon of lemon extract
  • ⅛ of teaspoon of salt
  • 2 teaspoons of fresh lemon zest to garnish the top of the cake
