One of My Favorite Things to Make in the Ip! Vietnamese Caramelized Ribs
Ingredients
  • 4 lbs pork spare ribs, cross-cut (found at Asian stores)
  • can of quail eggs (or cooked & peeled chicken eggs)
  • subheading: for caramel:
  • 3 tbsp sugar
  • 1 tbsp water
  • subheading: for marinade:
  • 4 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp mirin (optional for a pretty glaze)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • subheading: to cook:
  • 6 cloves garlic, minced
  • 1 large shallot, minced
  • 1.5 cup coconut water
