Xíu Mại Instant Pot (Vietnamese Meatballs)
Ingredients
  • subheading: Meatballs:
  • 1 lb of ground pork
  • ½ a medium size jicama (finely chopped)
  • ½ shallot (minced)
  • 3 cloves of garlic (minced)
  • 1 tbsp cornstarch
  • 2 eggs
  • 1.5 tbsp of sugar
  • 2 tbsp of good fish sauce (I used Red Boat)
  • 1 tbsp of mushroom seasoning
  • ½ tsp black pepper
  • subheading: Sauce:
  • 3 tbsp of annatto seeds oil for color (in a pan on medium heat added 3 tbsp of oil and 1 tbsp of annatto seeds, stirred continuously until oil color turns to a deep orange, drained oil and set aside, discarded seeds)
  • 2 large fresh tomatoes (diced)
  • ½ a white or yellow onion (diced)
  • 3 cloves garlic (minced)
  • ½ a shallot (minced)
  • 1 tsp of salt
  • 1 tbsp sugar
  • 1 tbsp of good fish sauce
  • 2 tbsp of mushroom seasoning
  • 2 cups of chicken broth
  • 2 cups of hot water
  • 2 tbsp of tapioca mix with 2 tbsp of water
