Spinach (Or Green Chile) and Artichoke Dip
Ingredients
  • 16 oz can of artichoke bottoms, chopped
  • 1 c mayonaise
  • 1 c grated parmesan cheese
  • 3 to 4 tbls. finely chopped green onion
  • 1 pkg. froz. chopped spinach, completely defrosted and drained or half of small can of mild chopped green chiles (or to taste if desired)
  • 4 oz. cream cheese
  • Mix all together and spread in an oven-proof casserole or glass pie dish. Top with a little more parmesan cheese, and broil until slightly brown and bubbly.
