Suar Palak Ka Gosht pork and spinach curry

Ingredients

  • 1 pound pork shoulder steaks or pork stewing chunks
  • Chicken broth
  • 3 small potatoes
  • Most of a bag of fresh spinach
  • 1 medium tomato, chopped fine (used canned tomatoes - 2 from the can)
  • 3 fresh bay leaves
  • 3 fat cloves garlic, peeled and crushed
  • 2 tbsp chopped ginger
  • 1 medium onion, chopped
  • 1 tsp whole cumin
  • 1 tsp chilli powder
  • 1 tsp turmeric powder
  • 1 tbsp garam masala (used curry powder)
  • 2 T chopped curry leaves
  • 2 whole carrots
  • 2 tbsp coconut oil
  • 1 tbsp butter or enough coconut milk to blend
  • Optional pigeon peas
