Fermented Asian Slaw with Peanut-Ginger Dressing
Ingredients

  • 4 c Cabbage, shredded
  • ¼ c Carrot, shredded or thinly sliced
  • ¼ c Red Bell Pepper, diced
  • ¾ c Cilantro, loosely packed
  • 2 tbsp Soy Sauce
  • ⅓ c Peanut Butter Powder OR ¼ c Smooth or Crunchy Peanut Butter. *If the PB has sugar in it, that is ok.
  • 1 tsp Honey or Cane Sugar
  • 1 tbsp Ginger, peeled & shredded
  • ½ to ¾ tsp lemon juice
  • 1 tsp Garlic, powder or granulated

  • subheading: SALT WATER BRINE:
  • ½ c / 120 ml Water
  • ¼ tsp / 1 to 2 g Salt

  • subheading: BRINE INSTRUCTIONS:
  • Combine the water and salt and mix thoroughly. Set aside.
