Carrot cake
Ingredients
  • 4 large eggs
  • ½ cup oil
  • ¾ Cup sugar
  • 1 cup brown sugar
  • ½ cup buttermilk
  • 2 ½ cups flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp salt
  • 3 cups carrot shredded

Steps
  1. Preheat oven 350.  Grease two 9X5 inch loaf pans
  2. Mix on low, beat the eggs, oil, sugars and buttermilk until blended.  Stir in flour, baking soda, baking powder, cinnamon, allspice and salt.  Stir in carrots.  Divide the batter evenly between the pans.  Bake until a toothpick inserted in center comes out clean, about 40 minutes.  Remove from the oven and cool on a rack for 15 minutes before removing from pans.  Cool completely on rack.
