Quinoa Stuffed Bell Peppers
Ingredients
  • 4 bell peppers
  • 1 cup uncooked quinoa
  • ½ onion, chopped

  • 1 can black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or mexican style)
  • 1 ½ tablespoons lime juice
  • ¾ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 3 teaspoons hot sauce
