Shrimp and Pork Wonton Soup
Ingredients
  • subheading: For Wonton Soup:
  • 1 green onion/scallion
  • 6 cups chicken stock/broth (1440 ml; if possible, use Asian-style chicken stock. Please read the post)
  • 1 tsp sesame oil (roasted)
  • 1 tsp kosher/sea salt (I use Diamond Crystal; Use half for table salt) (to taste)
  • ¼ tsp white pepper powder (to taste)
  • subheading: For Wontons:
  • 2 green onions/scallions
  • ½ lb shrimp (227 g, about 8 pieces; shelled and deveined)
  • ½ lb ground pork (227 g)
  • 1 knob ginger (1” or 2.5 cm)
  • 1 package wonton wrappers (12oz or 340g, roughly 46 wrappers)
  • subheading: Seasonings for Wontons:
  • 2 tsp soy sauce
  • 1 tsp sesame oil (roasted)
  • 1 Tbsp sake
  • ½ tsp sugar
  • 1 Tbsp potato starch/cornstarch
  • ¼ tsp white pepper powder
  • subheading: To Serve:
  • cilantro
  • white pepper powder (to taste)
  • chili sauce
