BF Blueberry Muffins (from Let Them Eat Vegan by Dreena Burton)
Ingredients
  • 1 ¼ cups oat flour
  • ¾ cup spelt flour
  • ⅓ cup unrefined sugar (light color sugar is nicest for final muffin color)
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt
  • 1 tsp lemon zest (don't omit!)
  • 2 tbsp vanilla or plain non-dairy yogurt (use soy-free as option)
  • 2 tbsp agave nectar or pure maple syrup
  • 1 tbsp freshly squeezed lemon juice
  • ½ cup + 3 to 4 tbsp plain non-dairy milk
  • 3 tbsp neutral-flavored oil OR ¼ cup applesauce (for oil-free version)
  • ¾ cup frozen or fresh blueberries, tossed in 1 to 2 teaspoons of oat flour
