African Stew Instant Pot

Today I made vegan African stew , this is an interesting mix that you would just say yucky with ingredients but I have to say taste delicious made in my instant pressure cooker pot in 7 min . Put it over brown rice yum!

2 large organic sweet potatoes , 1 medium onion, 4 celery stalks, 1 carrot, beet leaves, 2 cups of spinach , 6 garlic cloves, 1 can of chick peas, 1 can of diced tomatoes , 1 container of veg broth, 1 cup coconut milk but I used the toasted coconut milk, 1/3 cup natural peanut butter, tbsp curry, salt and pepper to taste . I put in pressure cooker for 7 min when done I used my electric stick to purée a little because I don't like chunky.
