Enchilada Casserole

Ingredients
  • 1 lb ground beef
  • 1 med onion, finely chopped
  • 1 can enchilada sauce
  • 1 small can diced green chilies*
  • 1 can cream of mushroom soup
  • 1 small can evaporated milk
  • ½ c sour cream
  • 1 doz corn tortillas, quartered
  • 1 c cheddar cheese, grated
  • 1 c jack cheese, grated
Steps
  1. Fry hamburger and onion together.
  2. Drain fat, then add next 5 ingredients.
  3. Simmer for 20 minutes.
  4. In large casserole dish, layer as follows: a little sauce, then layer of tortillas, sauce, cheese, tortillas.
  5. Continue layering, topping with sauce and cheese.
  6. Cover and bake 30 to 40 minutes at 350*.
Notes
  • *For hotter version, substitute Ro-Tel tomatoes for green chilies.
