Pot Sticker Stir-Fry
Ingredients
  • 1 tablespoon ghee
  • 2 medium carrots, peeled and finely diced
  • 2 shallots, minced
  • Kosher salt
  • 4 garlic cloves, minced
  • 1 tablespoon finely grated ginger
  • 1 pound ground pork or canned salmon
  • 1 small Napa cabbage, cut in half and thinly sliced crosswise
  • 12 oz mung bean sprouts
  • 2 tablespoons coconut aminos, Bragg's, tamari, or soy sauce
  • 2 teaspoon rice vinegar
  • 3 teaspoons toasted sesame oil
  • 3 scallions, thinly sliced
  • 1.5 c uncooked brown rice
