Pork Adobo with Potatoes by Rich Lum
Cooked in a 6 qt IP on HP
Ingredients
  • 2 pounds cubed pork shoulder..1 to 1.5” cubes
  • 2 russet potatoes cubed
  • ½ yellow onion chopped
  • 4 to 5 cloves of garlic smashed
  • ¼ cup white vinegar
  • ½ cup Shoyu (soy sauce)
  • 2 to 3 bay leaves
  • 10 to 15 peppercorns
  • 1 cup of water
  • ½ teaspoon salt or to taste
Steps
  1. Heat oil in a pan over medium heat and brown your pork in small batches....( you could set you IP to sauté, when it says hot add your oil and sauté the pork ..make sure you deglaze your pot)
  2. Add all the ingredients except the potatoes to the pot
  3. Close and seal your lid
  4. Set your pot to manual 15 minutes allow a 5 minute npr
  5. Add the potatoes
  6. Clos3 and seal your lid
  7. Set your pot to manual 4 minutes allow for a 5 minute npr
Notes
  • I did add 1 sliced carrot
