  • 4 cups  chicken broth low sodium
  • 1 cup diced tomatoes canned or fresh
  • 1 cup coconut milk preferably Aroy-D or Chaokoh brand
  • 3 cups baby spinach chopped
  • ¼ cup cilantro chopped
