Grilled Picnic Taco Nachos
Ingredients
  • 5 cups tortilla chips
  • 15 oz. can black beans; drained, rinsed and mashed
  • 4.5 oz. chopped green chilies, drained
  • 2 tsps. taco seasoning mix
  • 2 Roma tomatoes, chopped
  • 2 tbsps. sliced green onions
  • 2 cups finely shredded Colby Jack cheese
Steps
  1. Heat grill. Spray 12x18 foil pan with cooking spray and spread chips in pan.
  2. In medium bowl, mix beans, chilies and taco seasoning mix. Spoon evenly over tortilla chips. Top with tomatoes and onions. Sprinkle with cheese and cover pan with foil.
  3. Place foil pan on grill over medium heat. Cover grill and cook for 8 to 10 minutes until cheese is melted.
