Rainbow Thai Chicken Salad
Ingredients
  • 3 cp Cooked Chicken, Shredded
  • 2 cp purple cabbage, shredded
  • 1 cp green cabbage, shredded
  • 1 avocado, diced
  • 1 mango, peeled, pitted and diced
  • 1 carrort, julienned or shredded
  • 1 red pepper, cored and julienned
  • 1 cp fresh cilantro leaves, roughly chopped
  • ½ cp green onions, chopped
  • ¼ cp cashews or peanuts, chopped
  • subheading: PEANUT DRESSING:
  • ½ cp natural peanut butter
  • 2 tbsp Hot Water, 2 to 3 Tbs
  • 2 tbsp Rice Wine Vinegar
  • 2 tbsp Soy Sauce
  • 2 tbsp Honey
  • ¼ tsp Sesame Oil
  • Juice of 1 lime
  • pinch of red pepper flakes
