Whole Wheat Pasta with Zucchini and Salmon

Ingredients
  • 12 OZ. of salmon fillet
  • 9 OZ. of zucchini
  • whole wheat penne
  • baby spinach
  • Basil leaves
  • Extra virgin olive oil
  • Salt
  • Pepper
  • Sugar
Steps
  1. For the whole wheat pasta with zucchini and salmon recipe, clean the salmon and cut it into cubes. Season with salt, pepper and sugar, stir and let marinate for 2 hours. Trim the zucchini and cut them in half; dip them into boiling unsalted water for 4 minutes, then cool them in ice water.
  2. Drain and cut into large rounds. Cook the pasta in salted boiling water. Roast the salmon for 3 to 4 minutes in a pan with a drizzle of oil. Blend 6 to 7 zucchini slices with 25 g of oil, 50 g of water, salt and 2 basil leaves, obtaining a sauce. Drain the pasta and stir in the sauce. Finish with the salmon, remaining zucchini and spinach dressed with a little oil.
