One-Pot Healthy Beef and Quinoa Chilli
Ingredients
  • 400 grams lean beef mince preferably lean mince
  • 2 small red capsicums (peppers) or 1 large one!
  • 1 brown onion
  • ½ cup uncooked quinoa rinsed thoroughly
  • 400 grams tinned diced tomatoes (1 regular tin)
  • 1 and ½ cups beef stock
  • 2 cloves garlic
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper (adjust to taste)
  • Salt & pepper to taste
  • 2 tbsp extra virgin olive oil
