- 1 brown onion
- ½ cup uncooked quinoa rinsed thoroughly
- 400 grams tinned diced tomatoes (1 regular tin)
- 1 and ½ cups beef stock
- 2 cloves garlic
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp smoked paprika
- 1 tsp dried oregano
- ½ tsp cayenne pepper (adjust to taste)
- Salt & pepper to taste
- 2 tbsp extra virgin olive oil
