Ingredients
  • 3 cups shredded zucchini (2 to 3 medium-sized)
  • 1 ⅔ cups of sugar
  • ⅔ cup vegetable oil
  • 2 teaspoons vanilla
  • 4 large eggs
  • 3 cups all-purpose* or whole wheat flour (I used all-purpose)
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon baking powder
  • ½ cups coarsely chopped nuts (I used walnuts)
  • ½ cup raisins, if desired (I omitted these)
  • note: If using self-rising flour, omit baking soda, salt and baking powder.
