Three-Bean and Artichoke Salad
Ingredients
  • 1 (15.5 ounce) can Great Northern beans, drained & rinsed
  • 1 (15.5 ounce) can chickpeas, drained & rinsed
  • 1 (15.5 ounce) can black-eyed peas, drained & rinsed (or ½+ cup cooked farro)
  • 1 (13.75 ounce) can marinated artichoke hearts, drained and chopped
  • 4 green onions, chopped or ½ chopped red onion
  • 1 bunch grape tomatoes, quartered
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • ¼ cup chopped fresh parsley
  • 2 teaspoons crushed dried oregano
  • 1 teaspoon ground black pepper
