Greek Green Beans ( Fasolakia Lathera)
Ingredients
  • ¾ cup Olive Oil Extra Virgin
  • 1.5 lb Green Beans Washed and trimmed
  • 4 Tomatoes* Medium, Shredded (see the recipe notes)
  • ½ Onion Vidalia, Spanish or Red, chopped
  • 2 cloves Garlic Chopped
  • 3 Potatoes Medium yellow or red, chopped (optional)
  • 1 teaspoon Dry Oregano
  • 1 teaspoon Sugar Optional
  • 1 cup Water
  • 1 teaspoon Salt more to taste
  • Freshly Ground Black Pepper to taste
  • Juice of half a lemon
  • 1 tbsp Freshly Chopped Parsley to serve
  • ½ cup Feta Cheese to serve
  • 1 tbsp Tomato Paste (optional, see the recipe notes)
