Mamaw's Banana Pudding (doubled)
Ingredients
  • 6 eggs, separated
  • 1¾ c. Granulated sugar, separated
  • 4 T. Flour
  • 2 c. Milk
  • 1 c. Evaporated milk
  • 1 T. Vanilla, separated
  • 2 T. Butter
  • 2 boxes of vanilla wafers (will have some leftover)
  • 5 medium bananas, sliced
  • ½ tsp. cream of tarter
Steps
  1. Set aside egg whites. Slowly mix 1½ c. sugar into egg yolks. Add flour, milk and evaporated milk. Mix thoroughly. Cook at medium heat in a skillet until thickened. Add ½ tsp. vanilla and butter. In the meantime, spread vanilla wafers in bottom of baking dish. Top with sliced bananas. Pour thickened pudding over bananas.
  2. Merengue: In a large bowl, beat egg whites and cream of tarter until they form stiff peaks. Add ¼ c. sugar and ½ tsp. vanilla. Put on top of pudding. Stand up vanilla wafers around the edge of the pan. Bake at 350° for 10 minutes or until meringue is slightly browned.
