Prosciutto and Pear Flatbread
Ingredients
  • 2 Naan Flatbreads (or pizza dough)
  •  
  • 1 Anjou Red Pear. (or thin sliced fresh peaches, figs or nectarines)
  •  
  • 3 oz. Crème Fraîche (made homemade - can sub milk, sour cream or yogurt or cream cheese thinned with cream, white sauce etc) - can make with just cheese
  • 2 to 3 oz. Prosciutto
  • 2 to 3 oz. Shredded Mozzarella.*or Gruyère cheese or burratto or fresh mozz or goat
  • ½ fl. oz. Honey
  • ½ oz. Grated Parmesan Cheese
  •  
  • ½ oz. Baby Arugula
  • 0.14 fl. oz. Lemon Juice
  • ½ tsp. Garlic
  • ½ tsp Pepper
  •  
  • opt: Dash of balsamic glaze or 1 cup balsamic, ¼ cup honey, ½ tsp lemon juice boiled 5 min. to reduce, drizzle on cooked pizza
  • 1 to 2 tsp. chopped tarragon
  • Sprinkle of chopped walnuts or other nuts
  • Can use fig/pear etc preserves instead of white sauce
  • Can put arugula on pizza and bake with rest
