Instant Pot Medium Rare Roast Beef
Ingredients
  • 3lb top round roast
  • Olive oil
  • 2tsp thyme
  • 1tsp rosemary
  • 1tsp garlic powder
  • 1sp sweet basil
  • 1tsp salt
  • 1tsp pepper
  • 3 to 4 cloves garlic sliced
  • 1 cup beef stock( I used ½ beef stock and ½ cup red wine)
Steps
  1. Make slits all over roast and insert slices of garlic into the slits.
  2. Mix all seasonings together in a bowl.
  3. Rub roast w olive oil and then rub spices evenly over the roast.
  4. You can sear all sides of roast or just proceed with out searing. I did about 45 seconds on each side.
  5. Deglaze pan if you sear, otherwise add the stock or stock and wine mix set roast on trivet.
  6. Cook on manual high pressure for 3 minutes.
  7. Once done just leave it alone on keep warm for 1 ½ to 2 ½ hours. For medium rare temp should be 130 to 135.  Medium is 145.
  8. (After the 1st hour I did open the lid and checked my temp so as to not overcook. I left my roast on keep warm for 1 ½ hours and it was a perfect medium rare.)
  9. Remove roast and slice against the grain.
Notes
  • You can hit saute and thicken the leftover juice as desired. I did a corn starch slurry and the gravy was AMAZING!!!
