Chicken Rustica
Ingredients
  • 4 slices of thin sliced bacon, diced to ¼" pieces.
  • 2 large boneless, skinless chicken breasts
  • 1 lb medium shrimp, peeled, deveined and tails removed (about 40)
  • 2 teaspoons smoked paprika
  • salt and pepper
  • 2 tbls butter
  • 2 tablespoons minced garlic
  • 1 shallot, minced
  • 2 tbls Marsala wine
  • 1 tbls Grey Poupon Dijon Mustard
  • 2 teaspoons minced fresh rosemary
  • 1 tsp dry thyme
  • ¼ teaspoon ground cayenne pepper
  • 4 ¼ cups chicken broth
  • 1 cup heavy cream
  • 12 oz dry penne pasta
  • 8 ounces cream cheese , softened and cut into small pieces
  • 1 ½ cups grated parmesan cheese
  • 8 oz jar sun-dried tomatoes , drained and chopped
Steps
  1. Turn Instant pot to saute.
  2. Brown bacon until crisp - remove to paper towel. Leave oil in pot.
  3. Season chicken breasts on both sides with paprika, salt and pepper.
  4. Add chicken breasts and cook for 2 to 3 minutes on each side, until browned, but not cooked through. Remove to a plate.
  5. Add butter, garlic and minced shallot to the pot and saute for about 5 minutes. Be sure the garlic doesn't brown. Add shrimp - saute for 1 minute - don't overcook. Remove to plate.
  6. Add Marsala wine and deglaze pot.
  7. Add Grey Poupon Dijon Mustard, rosemary, thyme and cayenne pepper - stir to mix. Add chicken broth and cream, stir again. Return chicken to pot then the shrimp and lastly, the uncooked pasta.
  8. Close IP lid and turn release valve to sealed. Cook on manual (high pressure) for 5 minutes.
  9. When the timer beeps, turn valve to quick release, to release the pressure.
  10. Carefully open lid. Remove chicken to a plate and tent with foil. (Don’t skip this step. The chicken will continue to cook under the foil).
  11. Stir in cream cheese, 1 cup parmesan cheese, sundried tomatoes and stir gently until it’s melted and the sauce is smooth.
  12. Slice chicken to about ½ x 1 ½ inch pieces and return to pot. Stir.
  13. Spray a 10x13 baking dish with cooking spray.
  14. Put everything from the pot to the baking dish.
  15. Sprinkle over the crisped bacon then ½ cup of grated parmesan cheese.
  16. Place under the broiler till cheese is melted and crisped.
  17. (You could stir in the bacon to the pot as the last step and serve directly from the pot)
