Ingredients
- 4c chicken stock
- 2c diced potatoes
- 4c shredded zucchini
- 4c chopped spinach, kale, and/or chard
- 1c chopped scallions or chives
- 1 to 2 Tbl minced ginger
- Salt to taste
Steps
- Bring stock, potatoes, and zucchini to a boil; simmer 10 to 15 minutes until potatoes are soft.
- Add the greens and scallions; simmer 5 mins.
- Add the ginger, adjust salt. Blend with immersion blender, if desired.
Notes
- For best nutrition, use homemade stock. If using store-bought, consider adding supplemental gelatin or collagen to increase nutrient absorption and protein levels.
