Creamed Corn

Ingredients
  • 4 corn on the cobs
  • 1 shallot, finely sliced
  • 25g butter
  • splash of oil
  • 5 tablespoons single cream
  • toasted pumpkin seeds for garnish
Steps
  1. Boil the corn for 4 minutes, drain, then carefully cut the kernels from the cobs. Add to a pan with the shallot, butter, and oil, then cook until the shallot has softened and the corn is lightly colored. Tip into a food processor with the cream and plenty of seasoning, then whizz to your desired consistency, adding a little more cream if needed. Season, then serve sprinkled with toasted pumpkin seeds.
