Dairy Free Fereni, Persian Rice Starch Pudding

Ingredients
  • 500ml water
  • 50 to 60g cashew nuts
  • 2 tbsp rice flour
  • 2 to 3 tbsp raw sugar
  • 2 tbsp rose water
  • 1 green cardamom pod
  • Rose petals for decoration
  • Saffron (optional)
Steps
  1. subheading: Vitamix method:
  2. Combine all ingredients in a Vitamix blender jug (not a smoothie bowl, it must not be airtight) and process until hot and cooked. About 4 to 5 minutes.
  3. Pour into serving bowls, decorate and serve immediately.
  4. subheading: Other Method:
  5. Make your nut milk (if using homemade).
  6. Add all of the ingredients to a blender and process until totally smooth.
  7. Pour into a microwaveable bowl and microwave for 2 minutes, whisking thoroughly each time to prevent lumps. Then microwave for another 1 minute, whisk thoroughly, then at 30 second intervals, whisking each time, until cooked. I needed about 4 minutes.
  8. Pour into serving bowls and decorate, then serve immediately.
Notes
  • This method uses a Vitamix blender to process and cook. Do not use an airtight container.
