Japanese Tare Sauce (Sweet Soy Sauce)

I love to cook and create kitchen science. I've been a vegan since Dec 2020, so I have loads of vegan recipes in my repertoire.

This is the bomb.

1 cup soy sauce

1 cup mirin

½ cup sake

½ cup dark brown sugar

2 tablespoons sherry vinegar

6 garlic cloves, smashed and peeled

6 scallions, roughly chopped

1 (2-inch) piece ginger, peeled and roughly sliced

2 tablespoons whole black peppercorns
