Plov, One Pot Chicken and Rice
Ingredients
  • 2 cups Basmati or Jasmine rice
  • 3¼ cups boiling chicken stock or water
  • 1½ lbs boneless skinless chicken thighs
  • 3 to 4 (½ lb.) carrots
  • 2 medium small yellow onions
  • 2 small heads of garlic
  • 2 to 3 bay leaves (ideally fresh)
  • 1½ teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • ½ teaspoon aleppo pepper or pepper flake (optional)
  • Kosher salt and pepper
  • Oil, for cooking
